Coconut Bars

These babies are like a burst of summer in my mouth. They are sweet and nutty with that little chew in the centre. Loveeeee!

 

Makes 8

 

Oven 220c

Ingredients

  • 150g oats (100g blitzed to flour)

     

  • 100g unsalted peanuts, chopped

     

  • 50g desiccated coconut

     

  • 30g mixed seeds

     

  • 100ml maple syrup

     

  • 3tbsp tahini

     

  • 3tbsp oil

Directions

  1. Line a brownie tin with parchment. Mix all dry. Mix all wet in a small pot and bring to the boil, stirring.
  2. Combine, stirring well. If it seems a little dry, add a splash of water. Press into the tin. (The best way to do this is run a metal spoon under hot water and use it to press the mixture in tightly)
