Lemon Chicken with Orzo

This one tray dinner is a mix of lovely fresh flavours that will keep you going on energy. Also great the next day for a cold lunch.


Serves 4-6


Oven 180c


  • 1tbsp oil


  • 2 onions, sliced


  • 1 aubergine, cut into chunks


  • 8 chicken thighs


  • 1/2tsp curry powder


  • 1/2tsp thyme


  • zest and juice of 1 lemon


  • 500ml chicken stock


  • 2 cups of orzo


  • 4oz frozen peas


  1. Oil a large roasting tin and heat over the hob. Add the onion and aubergine and fry until softening.
  2. Add curry powder and thyme.
  3. Add chicken and cook until browning. Add lemons and stir well.
  4. Pour over the chicken stock, adding the orzo too. Season. Loosely cover and pop in the oven for 1hour, until the orzo has absorbed most of the stock. Stir in the peas and mix well. Serve with salad.
