This is a punchy, protein packed stew that will keep you warm on a winters night.

Ingredients
- 1tbsp oil
- 2 onions, diced
- 4 garlic cloves, chopped
- 1 thumb sized piece of ginger, grated
- 1tbsp thyme
- 1tsp cinnamon
- 1tsp smoked paprika
- 2tsp ground coriander
- 2tsp cumin seeds
- 2 packs of chopped tomatoes
- 700ml vegetable stock
- 2 peppers, diced
- 2 sweet potatoes, peeled and chopped
- 2 large carrots, halved and sliced
- 2 packs of kidney beans
- Rice to serve
Directions
- Heat the oil in a pot and cook the onion until soft. Stir in the garlic, thyme and ginger.
- Stir in the remaining spices. Add all remaining ingredient, pop on a lid and bring to a simmer for 40mins. Serve with rice and salad
