Honey Soy Chicken with Fried Rice

Oh but this is sooooo good!

 

Oven 200c

Ingredients

  • 8 chicken thighs

     

  • 3tbsp soy

     

  • 3tbsp honey

     

  • 1tbsp ginger paste

     

  • 1tbsp garlic paste

     

  • 2tbsp oil

     

     

  • Rice

     

  • 2 mugs brown rice (cooked)

     

  • 2tbsp oil

     

  • 1 onion, diced

     

  • 1 pepper, diced

     

  • 1 stick celery, diced

     

  • handful frozen peas

     

  • Seasoning

Directions

  1. For the chicken – Mix all the dressing ingredient together, pour over chicken and let marinade for 30mins. Transfer to a roasting tin and cook for 50mins, turning occasionally until brown.
  2. For the rice – heat the oil in a pan and cook the veg until softening. Add the peas. Stir in the rice and season to taste. Cook until warmed through and serve with chicken and dressing on top .
