Oh but this is sooooo good!
Oven 200c
Ingredients
- 8 chicken thighs
- 3tbsp soy
- 3tbsp honey
- 1tbsp ginger paste
- 1tbsp garlic paste
- 2tbsp oil
- Rice
- 2 mugs brown rice (cooked)
- 2tbsp oil
- 1 onion, diced
- 1 pepper, diced
- 1 stick celery, diced
- handful frozen peas
- Seasoning
Directions
- For the chicken – Mix all the dressing ingredient together, pour over chicken and let marinade for 30mins. Transfer to a roasting tin and cook for 50mins, turning occasionally until brown.
- For the rice – heat the oil in a pan and cook the veg until softening. Add the peas. Stir in the rice and season to taste. Cook until warmed through and serve with chicken and dressing on top .
