Garlic Tomato Pasta

A lovely change from the standard pasta sauce. Who doesn’t love garlicy, stewed flavours?


Serves 2


  • 1tbsp oil


  • 3 garlic cloves, sliced


  • 1 onion, diced


  • 1 red/1 yellow pepper, chopped


  • 250g cherry tomatoes, halved


  • 1tsp oregano


  • 2tbsp tomato puree


  • 100g spinach


  1. Heat the oil in a pot, cook the garlic, peppers and onion until soft.
  2. Stir in the oregano, cherry tomatoes and tomato puree and pop on a lid to sweat for 20minutes.
  3. Cook the pasta. Stir through the sauce and serve with parmesan.
