A lovely change from the standard pasta sauce. Who doesn’t love garlicy, stewed flavours?
- 1tbsp oil
- 3 garlic cloves, sliced
- 1 onion, diced
- 1 red/1 yellow pepper, chopped
- 250g cherry tomatoes, halved
- 1tsp oregano
- 2tbsp tomato puree
- 100g spinach
- Heat the oil in a pot, cook the garlic, peppers and onion until soft.
- Stir in the oregano, cherry tomatoes and tomato puree and pop on a lid to sweat for 20minutes.
- Cook the pasta. Stir through the sauce and serve with parmesan.
