Winter is the perfect time for warm, creamy pasta. This one is packed with flavour and super yummy.
- 1tbsp oil
- 4 spring onions, diced
- 2 red peppers, chopped
- 5 garlic cloves, crushed
- 500g tomatoes, chopped
- 1 carton pasatta
- 125g soft goats cheese
- Heat the oil in a pot and cook the onion, garlic and pepper until soft. Stir in all remaining ingredient except the goats cheese, pop on a lid and simmer for 15mins.
- Blitz until smooth.
- Cook the pasta when ready to eat. Heat the sauce gently, stirring through the goats cheese.
- Drain the pasta reserving a cup full of water. Mix the water and sauce with the pasta and serve with a good grind of black pepper and salad.
