This was a throw together that worked really well!! It is so fast and super flavoursome.
- 1tbsp oil
- 1 red onion, sliced
- 6 tomatoes, diced
- 1 carton cannellini beans
- 1tsp smoked paprika
- 1/2tsp cumin
- To serve – brown rice, diced tomato and avocado
- Heat the oil in a pan and stir in the onion and tomatoes, cooking until soft and smushy.
- Add the beans and spices. Pop on a lid and sweat on low for up to 20mins.
- Enjoy with rice, potato, couscous – whatever you fancy.
