Classic Lasagne

Comfort food at its best. Bursting with flavour – I just had to make this for tonight.

 

Serves 4-6

  • Cheese sauce –

     

  • 1tbsp olive oil

     

  • 2tbsp flour

     

  • 700ml milk of choice

     

  • 350g cheddar, grated (100g reserved for the topping)

     

  • 2 bay leaves

     

  • Seasoning

     

     

     

  • Mince mix –

     

  • 1tbsp olive oil

     

  • 2 onions, diced

     

  • 500g mince (I use quorn)

     

  • 2 400g cartons of organic chopped tomatoes

     

  • 2tbsp tomato puree

     

  • 3tbsp Organic ketchup

     

  • 3tbsp dried basil

     

  • 1tbsp oregano

     

  • Seasoning

     

     

     

  • Lasagne sheets

     

  • Serve with large mixed salad

Directions

  1. To make the mince mix, heat the oil in a medium sized pot and cook the onions until soft.
  2. If you are using real mince, stir it in and cook for five minutes before adding everything else. If you use quorn, simple add the rest of the ingredient at the same time. Stir and leave to simmer while you make the cheese sauce.
  3. In a smaller pot, heat the oil and stir in the flour. Slowly add the milk, whisking to avoid it clumping.
  4. Finally add the cheese, seasoning and bay leaves. Stir and let thicken.
  5. Oil your lasagna dish, and put a thin layer of mince in the base. Top with lasagna sheets. Anther layer of mince with cheese sauce. Top with lasagna sheets. Anther layer of mince with cheese sauce. Top with lasagna sheets. Now a final layer of cheese sauce toped with the reserved chees. Bake in the oven for around 45minutes, until golden and bubbling.
