Smashed Peas, Mint and Feta Toasts

Fab brunch. Lovely lunch or light dinner. Oh yes, this is a mummies dream 🙂


Serves 4




  • 200g garden peas, crushed 
  • ½ small bunch of mint, finely chopped 
  • 100g feta, crumbled 
  • Wheaten toasted


  1. Crush the peas with a fork. Stir in the feta and mint. Toast the wheaten and spoon on top. Yum!!
