Courgette and Green Lentil Soup

This is one to warm you up this autumn. Because of the extra chunkiness added by the lentils it is perfect to pop in a flask and away you go.

  • 1tbsp oil
  • 2 onions, chopped

     

  • 2 carrots, chopped

     

  • 2 sticks of celery, chopped

     

  • 2 large courgettes, sliced

     

  • 2 potatoes, chopped

     

  • 1ltr veg stock

     

  • 1 carton passata

     

  • 1 carton green lentils

Directions

  1. Heat the oil in a pot and cook the onion, courgette, carrot and celery for 5mins, until softening.
  2. Add the potatoes, stock, passata. Pop on a lid and leave to simmer for 20minutes.
  3. Remove from heat and blitz. Stir through the lentil and enjoy.
