This is one to warm you up this autumn. Because of the extra chunkiness added by the lentils it is perfect to pop in a flask and away you go.

- 1tbsp oil
- 2 onions, chopped
- 2 carrots, chopped
- 2 sticks of celery, chopped
- 2 large courgettes, sliced
- 2 potatoes, chopped
- 1ltr veg stock
- 1 carton passata
- 1 carton green lentils
Directions
- Heat the oil in a pot and cook the onion, courgette, carrot and celery for 5mins, until softening.
- Add the potatoes, stock, passata. Pop on a lid and leave to simmer for 20minutes.
- Remove from heat and blitz. Stir through the lentil and enjoy.
