Creamy Thai Red Curry

This is a super fast mid-week dinner for all you busy mummies.

 

Serves 4-6

  • 2tbsp oil

     

  • 3 chicken breasts, diced

     

  • 2 red peppers, cut in chunks

     

  • 1 onion, diced

     

  • 150g green beans, ¼

     

  • 3tbsp thai red paste

     

  • 2 cartons chopped tomatoes

     

  • 1 tin coconut milk

     

  • Rice to serve

Directions

  1. Heat the oil and cook the chicken until browning.
  2. Add the peppers, onion and beans and cook on low for 10mins until soft. Stir in the paste.
  3. Add the chopped tomatoes and coconut milk and simmer for 20minS. Enjoy!
