This is a super fast mid-week dinner for all you busy mummies.

- 2tbsp oil
- 3 chicken breasts, diced
- 2 red peppers, cut in chunks
- 1 onion, diced
- 150g green beans, ¼
- 3tbsp thai red paste
- 2 cartons chopped tomatoes
- 1 tin coconut milk
- Rice to serve
Directions
- Heat the oil and cook the chicken until browning.
- Add the peppers, onion and beans and cook on low for 10mins until soft. Stir in the paste.
- Add the chopped tomatoes and coconut milk and simmer for 20minS. Enjoy!
