This soup is packing a vitamin c punch ladies. Packed with anti inflammatory courgette that is also great for digestion and a great source of fiber and folic acid in the broccoli. It is simply a great bowl of goodness.
- 1tbsp oil
- 1 onion, diced
- 2 garlic cloves, chopped
- 200g broccoli, chopped
- 2 courgettes, halved and sliced
- 300ml vegetable stock
- 1 carton chopped tomatoes
- Heat the oil and cook the onion, garlic and courgette until soft.
- Add the broccoli, stock and tomatoes and simmer with the lid on for 20mins. Blitz. Serve with wheaten bread and cheese. Mmmmmm
