Green Goodness

This soup is packing a vitamin c punch ladies. Packed with anti inflammatory courgette that is also great for digestion and a great source of fiber and folic acid in the broccoli. It is simply a great bowl of goodness.


Serves 4




  • 1tbsp oil 
  • 1 onion, diced 
  • 2 garlic cloves, chopped 
  • 200g broccoli, chopped 
  • 2 courgettes, halved and sliced 
  • 300ml vegetable stock 
  • 1 carton chopped tomatoes


  1. Heat the oil and cook the onion, garlic and courgette until soft.
  2. Add the broccoli, stock and tomatoes and simmer with the lid on for 20mins. Blitz. Serve with wheaten bread and cheese. Mmmmmm
