Crispy Cornflake Chicken

This is a massive favourite in my house!


Serves 4




  • 4tbsp oil


  • 4 large chicken breasts


  • 3 eggs


  • 8tbsp plain flour


  • 2tbsp paprika


  • 6 cups of cornflakes, crushed


  • Seasoning


  1. Cut the chicken into strips. Lay on a board and beat gently to flatten. Season and set aside.
  2. Get 3 plates – 1 – put the flour and paprika and mix. 2 – Put the eggs and beat well with a fork. 3 – Put the cornflakes.
  3. Warm the oil in a frying pan. Take the chicken pieces one at a time and dip them firstly in the flour, shake well, then the egg, then the cornflakes (press down to cover well). When you have enough pieces for the pan, lower them in and cook for around 6min each side until crispy and golden. If you run out of anything, just top it up. To keep them crisp in the oven while you cook, put them on a cooling rack over a baking sheet. Serve with wedges and salad
