Simple. Fast and perfect with crunchy lettuce wraps.
- 1tbsp oil
- 1 onion, diced
- 3 carrots, halved and sliced
- 1 sweet potato, peeled and chopped
- 1 potato, chopped
- 1 large sprig thyme
- 100g giant couscous
- 400ml vegetable stock
- 1tsp harissa
- Heat the oil and cook the onion, carrots, potatoes and thyme until fragrant and starting to soften.
- Pop on the lid and turn down the heat for 5minutes. Stir in the couscous and stock, replace the lid and simmer for 15minutes.
