Giant couscous Stew

Simple. Fast and perfect with crunchy lettuce wraps.


Serves 4




  • 1tbsp oil


  • 1 onion, diced


  • 3 carrots, halved and sliced


  • 1 sweet potato, peeled and chopped


  • 1 potato, chopped


  • 1 large sprig thyme


  • 100g giant couscous


  • 400ml vegetable stock


  • 1tsp harissa


  1. Heat the oil and cook the onion, carrots, potatoes and thyme until fragrant and starting to soften.
  2. Pop on the lid and turn down the heat for 5minutes. Stir in the couscous and stock, replace the lid and simmer for 15minutes.
