Waffle Time

Oh yes….. its waffle time in our house today. Because every now and then we just need a splurge on the sweet, sticky, yumminess that is a waffle cone. These are not my recipe, it is a classic that I like to do as a big treat on special occasions and boy does it go down well. Not a scrap left – EVER!

 

Makes 2 –  serves 4

  • 20g self-raising flour

     

  • 100g golden caster sugar

     

  • 1tsp vanilla essence

     

  • 50ml condensed milk

     

  • 1tbsp oil

     

  • 2tbsp corn flour

     

  • 1tbsp custard powder

     

  • 2 eggs

     

  • To serve – ice cream, sprinkles, sauce

Directions

  1. Mix everything in a bowl. Cover and place in the fridge for an hour.
  2. If you have a waffle machine, now is the time to use it. We make these so seldom that I simply oil a griddle pan and pour half the mix onto it, it can be quite thick so be speedy and spread it out to a workable thickness as you’ll be halving it and rolling it into a cone, so go with what looks right to you. Let it brown on one side, then flip and do the other, takes around 1 minute.
  3. Set aside to cool while you make the second. Cut 4 pieces of greaseproof paper to hold your cones. Cut the waffles diagonally, into triangles, curl them into a vague cone shape, tuck into the greaseproof paper and fill with ice cream. Make them as decadent as you like, with chocolate, fudge or honeycomb sprinkles and chocolate sauce.
