I love gnocchi! It is so soft and filling, and totally versatile. This is ready in no time, the perfect mid-week meal for busy mummies.
- 3tbsp mascarpone
- 1tbsp Dijon mustard
- 1 lemon, juiced
- 300g broccoli, florets only
- 700g gnocchi
- 1tbsp oil
- 150g peas
- 2tbsp toasted pine nuts
- Mix the mascarpone, lemon juice and mustard and set aside.
- Bring two pots of water to the boil. Add the gnocchi to one and simmer for 5minutes. Add the broccoli to the other and boil for 5minutes.
- Meanwhile heat the oil in a pan and stir in the peas. Add the drained broccoli and dressing. Drain the gnocchi and stir through until coated. Serve topped with pine nuts.
