- 3tbsp oil
- 3tbsp garlic infused oil
- 8 chicken thighs or drummers
- 3 red peppers, chopped
- 2 onions, cut into wedges
- 2 red onions, cut in wedges
- 1 courgette, cut into think slices
- 8 potatoes, chopped
- 3 garlic cloves, whole
- 2tbsp honey
- 2tsp smoked paprika
- Marinade – 2tbsp garlic oil, 2tbsp tomato puree, 1tsp smoked paprika
- Parsley to serve
Directions
- Mix the marinade together and then pour over the chicken and stir. Pop in the fridge for at least 1hour.
- Put all the remaining ingredient in a roasting tin and stir in the oils. Make sure everything is mixed and covered. Put in the oven for 40mins, turning occasionally. Sprinkle in parsley. Serve with salad.
