A simple lunch filler or picnic add – so easy to make and store away in the fridge to enjoy hot or cold.
- ½ large carrot, grated
- 25g grated cheese
- 20g breadcrumbs
- 1 egg
- Grate the carrot into a bowl and mix everything together with a spoon.
- Grease a muffin tin and put tbsp of mix into each section. Bake for 15minutes. Eat hot or pop in the fridge for a picnic
