Italian Salad

Such a simple salad that is packed with antioxidants and iron

Serves 2



  • Large handful of spinach

  • 60g watercress and rocket

  • 6 cherry tomatoes, halved

  • 1 tomato, diced

  • 3 sundried tomatoes, chopped

  • 60g small mozzarella balls, halved┬á

  • 2 spring onions, sliced

  • 1 avocado, diced

  • Dressing- 3tbsp olive oil, 2tbsp garlic oil, 1tsp whole grain mustard, 1tsp honey.


  1. Mix all the salad ingredient in a bowl.

  2. Mix the dressing together and toss over the salad- I use my hands. Messy but way better!
