Such a simple salad that is packed with antioxidants and iron

Large handful of spinach

60g watercress and rocket

6 cherry tomatoes, halved

1 tomato, diced

3 sundried tomatoes, chopped

60g small mozzarella balls, halved

2 spring onions, sliced

1 avocado, diced

Dressing- 3tbsp olive oil, 2tbsp garlic oil, 1tsp whole grain mustard, 1tsp honey.
Directions

Mix all the salad ingredient in a bowl.

Mix the dressing together and toss over the salad- I use my hands. Messy but way better!
