Vegetable Pastry Pizza

This is a super easy, fast and yummy lunch or dinner. Although this recipe is for veg, it could easily be rhubarb, apple, etc.

Serves 4



  • 1 roll of puff pastry
  • 1tbsp oil
  • 2 peppers, chopped
  • 1 courgette, sliced
  • 1 red onion, diced
  • 6 shallots, chopped
  • 1 aubergine, sliced
  • 4 garlic cloves
  • 3tbsp sweet chutney
  • 4 slices of brie
  • 4 slices of goats cheese
  • 1 ball mozzarella
  • 1/2tsp mustard seeds
  • 1/2tsp marjoram
  • 1tbsp honey


  1. Toss the veg in the oil and herbs and spread on a baking sheet. Cook for 30mins, turning occasionally. Remove and let cool.
  2. Cut pastry into the biggest circle you can get and place on a baking sheet (preferably a pizza one). Spread the chutney and veg across the base leaving a 11/2inch edge. Crimp the edges to form a sort of dish shape.
  3. Place the brie and goats cheese on top. Pop in the oven for 20mins.
  4. Remove, put on the mozzarella and return to the oven for 10mins. Serve with salad.
