I love a vegetable to dip and these are no exception. A great side or afternoon snack.
- 200g carrots, sliced in wedges
- 1tsp sesame oil
- 1tsp cumin seeds
- 3tbsp hummus (homemade or shop bought)
- 25ml water
- Juice ½ a lemon
- If you have it – pomegranate to dress
- Toss the carrots in the oil and seeds, spread on a tray and roast for 20minutes.
- Meanwhile, mix the hummus, water and lemon juice and set aside. Serve on a platter with dip.
