Vegetable Stew

This was an accidental recipe. Yes – that happens  I was making a pot of weaning food and this happened….. cub got a bowl but the rest was polished off by the big people.



  • 1tbsp oil
  • 1 onion, diced
  • 2 carrots, cut into chunks
  • 1 stick celery, chopped
  • 1 red pepper, chopped
  • 3 potatoes, cut in chunks
  • 700ml vegetable stock
  • 2 bay leaves
  • 1tbsp chopped thyme
  • 1 carton green lentils
  • Couscous to serve


  1. Heat the oil in a pot, add the onion, celery, pepper and carrot and cook for 5minutes until softening.
  2. Add the stock, potatoes, herbs and lentils and simmer, covered for 20minutes longer.
