Lemon Chicken

Oh yes, it’s bitter sweet and soooooo fast to plate up!

Serves 4



  • 4 chicken breasts, cut into bite sized pieces
  • 200ml squeezed lemon juice
  • 11/2tbsp soy sauce
  • 1tbsp honey
  • 11/2tbsp cornflour
  • Brown rice to serve


  1. Mix the lemon juice, honey, soy and cornflour in a dish and pour over the chicken. Leave to marinade.
  2. When ready to eat, cook the rice according to instructions and pour the chicken and sauce into a non stick pan. Cook slowly until cooked, 10minutes or so. Serve immediately.
