Hazelnut Blitz Bar

These are different to my last few biscuit based treats. They are raw (no baking required) and chewy. They oooooze morish yumminess and we just can’t get enough of them! Unlike the others, they aren’t for dunking but for eating all on their own with a big smile on your face  (I hope)

  • Base – 150g medjool dates, soaked
  • 150g hazelnuts, blitzed
  • 3tbsp quinoa super seeds (I used Merchants but any quinoa will do)
  • 1tbsp maple syrup
  • Pinch salt
  • Chewy Blitz – 150g medjool dates, soaked
  • 3tbsp melted cocnut oil
  • 3tbsp cashew butter
  • 4tbsp maple syrup
  • Pinch salt
  • Top – 120g 85% chocolate, melted (I use Green & Blacks)

Directions

  1. First, make the base. Blitz the hazelnuts in a food processor, add the remaining ingredient and pulse to combine. Press into a lined tin, keeping it about 2cm thick. Pop in the fridge.
  2. Next, make the chew. Blitz everything together in a food processor and spread on top of the base. Pop in the fridge to cool.
  3. Melt the chocolate and pour over the top. Put in the freezer. Leave them in there if you like them pretty solid or keep in the fridge.
