Rough Oat Cakes

I am not normally an oat cake fan, but I recently at some out of pure necessity and guess what – they were pretty darn nice. So I figured I’d try making my own.

  • 100g oats 
  • 40g wholemeal wheat flour 
  • Pinch salt 
  • 1/2tsp bicarbonate of soda 
  • 1tsp chopped (or dry) thyme 
  • 40g melted butter 
  • 50ml warm water

Directions

  1. Mix the oats, flour, soda, salt and herbs in a bowl.
  2. Melt the butter in the microwave (or use cold) and mix with your hands. Stir in the water and squeeze together into a rough dough. Drop out onto a dusted work top. Roll out to about 1/2cm thick, them crush any bumpy bits down with your hands and cut out to your desired size. I just keep crushing the dough back together, flattening it with the heel of my hand and cutting out. Lay the biscuits on a lined tray and pop in the oven for 15minutes or until golden.
