Bean Quesadillas

These are so simple to make. They can be prepped and ready to go way in advance and that makes them a hit for me!



  • 8 tortillas
  • 5 shallots, sliced
  • 2 cartons black beans
  • 1 carton cannellini beans
  • 100g grated cheese
  • 1tbsp fennel seeds, crushed
  • handful of torn coriander and mint
  • Oil to fry
  • Guacamole – 3 avocados
  • 2 vine tomatoes, diced
  • 1 red onion, diced
  • 1 lime, juiced


  1. Firstly, make your guacamole. Crush everything together with your hands and pop in the fridge. It’s that easy.
  2. Next, mix the beans, onion, seeds, cheese and herbs together in a bowl and set aside until you are ready to eat.
  3. Lay the wraps out flat and spoon the filling onto one halve, then simply fold over the other side and press it down lightly to seal it like a half moon. Heat a little oil in your pan and gently fry, turning after a minute or two (it should be golden) to do the other side. Eat with the guacamole.
