These are so simple to make. They can be prepped and ready to go way in advance and that makes them a hit for me!

- 8 tortillas
- 5 shallots, sliced
- 2 cartons black beans
- 1 carton cannellini beans
- 100g grated cheese
- 1tbsp fennel seeds, crushed
- handful of torn coriander and mint
- Oil to fry
- Guacamole – 3 avocados
- 2 vine tomatoes, diced
- 1 red onion, diced
- 1 lime, juiced
Directions
- Firstly, make your guacamole. Crush everything together with your hands and pop in the fridge. It’s that easy.
- Next, mix the beans, onion, seeds, cheese and herbs together in a bowl and set aside until you are ready to eat.
- Lay the wraps out flat and spoon the filling onto one halve, then simply fold over the other side and press it down lightly to seal it like a half moon. Heat a little oil in your pan and gently fry, turning after a minute or two (it should be golden) to do the other side. Eat with the guacamole.
