Thyme Diced Potatoes

These are the easiest go to as a side. They look great and taste deliciously simple.

Oven 220c



  • 400g white potatoes
  • 1tbsp olive oil
  • Couple of sprigs of thyme


  1. Dice your potatoes and boil for ten minutes until starting to soften when skewered with a fork. Drain.
  2. Toss in oil, seasoning and the leaves of thyme. Spread on a baking sheet and cook for thirty minutes, turning once.
