These are the easiest go to as a side. They look great and taste deliciously simple.
- 400g white potatoes
- 1tbsp olive oil
- Couple of sprigs of thyme
- Dice your potatoes and boil for ten minutes until starting to soften when skewered with a fork. Drain.
- Toss in oil, seasoning and the leaves of thyme. Spread on a baking sheet and cook for thirty minutes, turning once.
