Food prep for the week ahead…..
A great way to use up excess rice and it makes a fab lunchbox option.
- Handful of leftover rice
- ¼ cucumber, diced
- 1/3 sweet red pepper, diced
- 2tsp honey
- 2 limes juiced
- Mix the lime juice and honey in a bowl and set aside.
- Dice the cucumber and pepper, stir into the rice along with the dressing and serve as a side or pack up for a handy lunch.
