Leek Soup

This is a twist on leek and potato soup. A blended, lighter version that I came up with for weaning my six month old.

Serves 4-6



  • 1tbsp oil
  • 2 large leeks, chopped
  • 1 stick of celery, chopped
  • 1 garlic clove, chopped
  • 6 medium potatoes, chopped
  • 1.5 litres vegetable stock
  • 1 bay leaf


  1. Heat the oil and cook the leeks and garlic until soft.
  2. Add the potatoes, bay leaf and stock.
  3. Bring to the boil and then place on the lid and simmer for 30minutes. Remove from the heat and blend.
