A vegetarian roll that everyone will love!!

- 1tbsp olive oil
- 1 onion
- Handful of spinach
- 4 large tomatoes, diced
- 2 cartons of chickpeas
- 200g sundried tomatoes
- 1tbsp tomato puree
- mixed green herbs
- 200g feta cheese, crumbled
- Puff pastry
- 1 egg
- Seeds for sprinkling
Directions
- Put the chickpeas, tomato puree and sundried tomatoes in a blender and blitz.
- Heat the oil in a pan; cook the onion until soft, stir in the tomatoes, spinach, herbs and chickpea mixture. Lastly, stir in the feta.
- Unroll the pastry, layer the mix in a thick line down the center.
- Spread the egg along the edges, preserving a little for the top. Turn up the sides and seal in a roll.
- Slice into ‘sausage roll’ sizes and place on a baking sheet. Bake for ten minutes.
- Serve with salad.
