Sunshine Cod

What a pretty plate of sunshine  And what a great way to get kids eating the things you want them to.

Serves 4



  • 1tbsp olive oil
  • 4 portions of cod
  • Mango Salsa – 1 mango, diced
  • 8 on the vine tomatoes, diced
  • 3 spring onions, chopped
  • 1 lime, juiced


  1. Mix all the salsa ingredient in a dish and set aside until eating.
  2. Heat the oil in a pan and cook the cod through until white and moist.
  3. Dish the salsa onto the plates and top with the fish. Mmmmm
