Peanut Energy Balls

New ENERGY BALL! What could be better than peanut and date? Not a thing……

And with the easter holidays hot on our heels all you mummies out there could do with the boost

Ingredient

  • 6 Medjool dates
  • 150g Unsalted peanuts
  • Pinch of salt
  • Cocoa to cover

Directions

  1. Soak the dates in hot water for a few minutes to soften them.
  2. Drain and place them in a blender with the nuts and salt.
  3. Roll teaspoonfuls of the mix into balls, dip them into the cocoa and set aside for later.
  4. Store in the fridge for up to a week.
