Mango Salsa with Harissa Chicken

This is sweet, crunchy and light! Perfect for those sunny days or a dull one that needs some light.

Serves 4

Oven 200c



  • 4 chicken breasts
  • 4tbsp harissa paste
  • 1 mango, diced
  • 1 red onion, diced
  • ┬Ż cucumber, diced
  • 1 lemon, juiced


  1. Toss the chicken in the harissa paste to marinade in the fridge for at least 2hours.
  2. Toss all the diced ingredient in the lemon juice and refrigerate until ready to eat.
  3. Cook the chicken in the oven for 30mins and serve on top of the salsa.
