This is sweet, crunchy and light! Perfect for those sunny days or a dull one that needs some light.
- 4 chicken breasts
- 4tbsp harissa paste
- 1 mango, diced
- 1 red onion, diced
- ½ cucumber, diced
- 1 lemon, juiced
- Toss the chicken in the harissa paste to marinade in the fridge for at least 2hours.
- Toss all the diced ingredient in the lemon juice and refrigerate until ready to eat.
- Cook the chicken in the oven for 30mins and serve on top of the salsa.
