Cheats Satay Noodles

I lovvvveeee peanut butter. Any nut butter in fact, so what better than using it for dinner. This is such a simple recipe with very little cooking. Great for a working mummy to pop on the table or for a healthy weekend take-away option.

Serves 4



  • 5tbsp peanut butter
  • 2tbsp soy sauce
  • 2 garlic cloves, diced
  • 1 thumb sized piece of ginger, grated
  • 4 spring onions, sliced
  • 1 chilli, sliced
  • 1 lime, juiced
  • 200ml coconut milk
  • 400g pack of udon noodles


  1. Heat the peanut butter, soy, garlic and ginger in a small pan.
  2. Boil the noodles.
  3. Toss the noodles in the warm sauce and top with the spring onion and chilli. Enjoy!
