I lovvvveeee peanut butter. Any nut butter in fact, so what better than using it for dinner. This is such a simple recipe with very little cooking. Great for a working mummy to pop on the table or for a healthy weekend take-away option.

- 5tbsp peanut butter
- 2tbsp soy sauce
- 2 garlic cloves, diced
- 1 thumb sized piece of ginger, grated
- 4 spring onions, sliced
- 1 chilli, sliced
- 1 lime, juiced
- 200ml coconut milk
- 400g pack of udon noodles
Directions
- Heat the peanut butter, soy, garlic and ginger in a small pan.
- Boil the noodles.
- Toss the noodles in the warm sauce and top with the spring onion and chilli. Enjoy!
