Eat on its own or with a bbq but either way, enjoy it!
- 1tbsp rapeseed oil
- 200g asparagus spears
- 100g walnuts, toasted
- 1 avocado, diced
- 1 beef tomato, diced
- 1 red pepper, diced
- 200g spinach
- 1 romaine lettuce, torn
- Dressing – 4tbsp olive oil, 2tbsp honey, 3tbsp balsamic vinegar
- Mix the dressing ingredient together and set aside.
- Power boil the asparagus.
- Heat a griddle pan with the oil and char on two sides.
- Mix everything in a serving bowl and toss in the dressing.
