Charred Asparagus, Walnut Salad

Eat on its own or with a bbq but either way, enjoy it!



  • 1tbsp rapeseed oil
  • 200g asparagus spears
  • 100g walnuts, toasted
  • 1 avocado, diced
  • 1 beef tomato, diced
  • 1 red pepper, diced
  • 200g spinach
  • 1 romaine lettuce, torn
  • Dressing – 4tbsp olive oil, 2tbsp honey, 3tbsp balsamic vinegar


  1. Mix the dressing ingredient together and set aside.
  2. Power boil the asparagus.
  3. Heat a griddle pan with the oil and char on two sides.
  4. Mix everything in a serving bowl and toss in the dressing.
