Sticky Chicken

Serves 4

Oven 200c



  • 4 chicken breast
  • 1tbsp cumin
  • 3tsp sumac
  • 2tbsp flour
  • 1tbsp oil
  • 6 dates, stoned
  • 150g light brown sugar
  • 150ml red wine vinegar
  • 2tbsp sesame seeds
  • Couscous and salad to serve


  1. Season the chicken breasts, then toss in the sumac, flour and cumin. Place on a tray and roast for fifteen minutes.
  2. Meanwhile, blitz the vinegar, dates, sugar and 100ml water. Pour into a pan and simmer until thick and shiny.
  3. Pour over the chicken, along with the seeds and return to the oven for ten minutes.
