- 4 chicken breast
- 1tbsp cumin
- 3tsp sumac
- 2tbsp flour
- 1tbsp oil
- 6 dates, stoned
- 150g light brown sugar
- 150ml red wine vinegar
- 2tbsp sesame seeds
- Couscous and salad to serve
Directions
- Season the chicken breasts, then toss in the sumac, flour and cumin. Place on a tray and roast for fifteen minutes.
- Meanwhile, blitz the vinegar, dates, sugar and 100ml water. Pour into a pan and simmer until thick and shiny.
- Pour over the chicken, along with the seeds and return to the oven for ten minutes.
