Ready in two swift moves….does this sound good, or does this sound good?

Ingredients
- 2tbsp oil
- 1 onion, diced
- 1 courgette, diced
- 3 garlic cloves, chopped
- 3 peppers, cut in chunks
- 150g soft goats cheese
- 1tsp capers
- handful of toasted pine nuts
Directions
- Heat the oil in a pot and cook the onion, courgette and garlic for a few minutes until soft.
- Stir in the peppers and cook for a few minutes longer, then pop on the lid and sweat on low for 15minutes.
- Put pasta on to cook. Drain pasta, toss in the goats cheese and stir through the vegetables along with the capers. Sprinkle pine nuts on top.
