- 1tbsp coconut oil
- 4 chicken breast, chopped
- 2 onions, thinly sliced
- ½ red pepper, sliced
- 1 mango, chopped
- 1tsp flour
- 1tbsp soy sauce
- 1tbsp honey
- 1/2tsp curry powder
- 500ml chicken stock
- Rice to serve
Directions
- Heat the oil in a pot and fry the onion and pepper until soft and browning.
- Add the chicken and cook until browning.
- Add the mango and cook, stirring for 2-3minutes.
- In a separate bowl, mix the flour, soy, honey and stock until smooth and creamy. Stir into the chicken mixture until thickened. Serve with rice and salad
