Who doesn’t love a good pasta bake?

- 1tbsp rapeseed oil
- 350g cooked pasta
- 1 onion, diced
- ½ red pepper, diced
- ½ green pepper, diced
- 1 courgette, diced
- 300g quorn mince
- 2 cartons chopped tomatoes
- 2tbsp tomato puree
- 1tbsp tomato ketchup
- 1tsp sugar
- 2tsp basil
- 1 cup red wine (if you have it!!)
- 4 slices soda bread, blitzed
- 1tbsp butter
- 2oz grated cheese
- 2tsp basil
Directions
- Heat the oil in a pot, add the onion and peppers and cook for 5minutes until soft.
- Stir in the courgette and cook until soft.
- Stir in the quorn mince, along with the chopped tomatoes, wine, herbs, tomato puree, ketchup and sugar. Simmer until thickened and reduced.
- Stir in the pasta and pour into a greased oven proof dish.
- Now for the topping – blitz the soda to crumbs, stir in the cheese, butter, seasoning and basil. Spread over the pasta mix and pop in the oven for 30minutes.
