I love nothing more than a lovely warming soup. This has all the anti-inflammatory qualities from fresh ginger and garlic and the amazing super food turmeric. The perfect soup to build immunity for winter.
Serves 6
Ingredients
- 1tbsp oil
 - 1 onion, diced
 - 3 garlic cloves, chopped
 - 1tbsp fresh chopped ginger
 - 1tsp ground cumin
 - 1tsp ground coriander
 - 1tsp turmeric
 - 300g red lentils
 - 600g peeled, chopped squash
 - 1200ml stock
 
Directions
- Heat the oil in a pan and cook the onion until soft.
 - Stir in the garlic and ginger. Add the spices and stir for 1minute.
 - Add the lentils, squash and stock and simmer until soft, around 20minutes. Blitz and season.
