This is a combo between a stew and a soup. I love big hearty meals like this!
Serves 4-6
Ingredients
- 1tbsp oil
- 2 onions, diced
- 2 garlic cloves, crushed
- 2 thumb sized pieces ginger, grated
- 3 sweet potatoes, peeled and diced
- 3 potatoes, diced
- 1ltr veg stock
- 1 tin coconut milk
- 1tbsp curry powder
- 1/2tbsp cayenne
- 200g red lentils
- 150g brown rice
- Handful of spinach
Directions
- Heat the oil and cook the onion and garlic until soft. Stir in the ginger.
- Add all remaining ingredient and simmer for 30mins. Serve with salad and crunchy bread/flatbread.
