- Dressing – 2tbsp peanut butter
- 1tbsp rice vinegar
- 1tbsp tamari
- 1tbsp maple
- 2tsp sesame seeds
- Noodles – 200g rice noodles
- 75g edamame beans
- 140g baby spinach, torn
- 2tsp sesame seeds to top
- Cook noodles according to instruction, drain. In a small bowl, mix together the dressing and set aside.
- Transfer the edamame beans and spinach to a bowl with the noodles, drizzle with dressing and toss until coated. Serve sprinkled in seeds.
