Edamame and spinach Rice Noodle Salad

Looking for a speedy dinner without cutting back on nutrition and flavour? Here it is.

 

Serves 4

Ingredients

  • Dressing – 2tbsp peanut butter

     

  • 1tbsp rice vinegar

     

  • 1tbsp tamari

     

  • 1tbsp maple

     

  • 2tsp sesame seeds

     

  • Noodles – 200g rice noodles

     

  • 75g edamame beans

     

  • 140g baby spinach, torn

     

  • 2tsp sesame seeds to top

Directions

  1. Cook noodles according to instruction, drain. In a small bowl, mix together the dressing and set aside.
  2. Transfer the edamame beans and spinach to a bowl with the noodles, drizzle with dressing and toss until coated. Serve sprinkled in seeds.
