I love a good soup and this one is warm and hearty.
Serves 6
Ingredients
- 125g dried quinoa
- 1tbsp olive oil
- 1 onion, diced
- 1 carrot, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 potato, chopped
- 1 sweet potato, chopped
- 3 garlic cloves, crushed
- 1tsp smoked paprika
- 1tsp cried oregano
- 3tbsp flour
- 360ml almond milk
- 360ml veg stock
- 1tbsp tamari
- 2tbsp fresh lemon juice
Directions
- Cook the quinoa according to instructions, drain and set aside.
- Meanwhile, heat the oil in a pan, add the onion and cook for 5minutes. Next add the carrot and peppers and cook for 5 more minutes. Now add the potato, sweet potato, garlic, spices and flour, cook for 2 minutes.
- Add the almond milk, tamari and stock, bring to the boil, then reduce and simmer for 20minutes.
- Stir through the lemon juice, season and serve topped with quinoa.
